Spicy Coconut Chicken Casserole

I LOVE my office and the gals I work with. We’ve started making lunches for everyone to share weekly. The past few weeks have included taco bar, salad bar and white chicken lasagna. This week in an effort eat healthy and spice things up I tried a new recipe from my Pinterest boards. This Spicy Coconut Chicken Casserole from Martha Stewart is delicious.  Of course I added a little spin to it and subbed ingredients for what I had on hand. Here’s what I changed:

  • Added 1 teaspoon of coconut curry powder (from Central Market)
  • Subbed Thai red curry paste for Trader Joe’s Thai dry chili paste
  • Added 1/2 cup more rice after reading recipe reviews
  • Added 1 sliced zucchini
  • Swapped whole chicken legs for thighs

Simmer the chicken and rice.
