This morning I was craving a hot breakfast but didn’t have much in the fridge. I had enough eggs this week so for once, even breakfast tacos didn’t sound good. I found some quick cooking steel cut oats from Trader Joe’s and decided to add some apples, maple syrup and butter to replicate the filling in a warm apple pie. The result was a comforting, filling breakfast that I’m sure will be a staple this fall in our house.
I used Trader Joe’s Quick Cook Steeel Cut Oats and my favorite high quality maple syrup from Whole Foods. The Gala apple I used had a great crisp flavor and even held a bit of crunch after being sauteed.
Simmer chopped apples in butter and maple syrup until tender.
The trick here is cooking the oats right in with the apples so they soak up all that flavor. I cooked according to the quick cook oats directions. Boil 3/4 cups water and add 1/4 cup oats. Simmer for 5-7 min and let it sit for one minute after taking off heat. I’m also going to try with milk instead of water next time to add a creamy consistency.
I added chopped banana, sliced almonds and a few dried cranberries then drizzled a little extra syrup over the top.
