Apple Pie Oats

This morning I was craving a hot breakfast but didn’t have much in the fridge. I had enough eggs this week so for once, even breakfast tacos didn’t sound good. I found some quick cooking steel cut oats from Trader Joe’s and decided to add some apples, maple syrup and butter to replicate the filling in a warm apple pie. The result was a comforting, filling breakfast that I’m sure will be a staple this fall in our house.

I used Trader Joe’s Quick Cook Steeel Cut Oats and my favorite high quality maple syrup from Whole Foods. The Gala apple I used had a great crisp flavor and even held a bit of crunch after being sauteed.

Boil 3/4 cups water and add 1/4 cup oats. Simmer for 5-7 min and let it sit for one minute after taking off heat. I’m also going to try with milk instead of water next time to add a creamy consistency.
