Making homemade pizzas is a fun and healthy alternative to ordering for delivery. Pizza parties where everyone can build their own based on a full bar of crazy toppings are always a hit. Kids especially love getting creative and helping create their dinner. During the summer I also love throwing pizzas on the BBQ. This flat bread style pizza is quick and delicious.
This week after a run to Trader Joe’s we were inspired to create a whole wheat pizza packed with flavor for date night. We bought whole wheat dough from TJ’s and allowed it to rise for about an hour before rolling it out.
I love chorizo and tofu so of course I jumped at the chance to try out soy chorizo. It was delicious and much healthier than the traditional version.
Next step is spreading the pesto out on our whole wheat dough quickly since our pizza stone was preheated!
Then you gotta add cheese! We used shredded Manchego because I’m obsessed.
Freshly chopped Roma tomatoes and soy chorizo crumbles add some deep color and contrast of flavors.
A blend of fresh spinach and kale, lightly sautéed adds nutrition and flavor.
Top with more cheese of course! It’s ready to bake at 400 for about 10-15 minutes until cheese is melted and crust is golden.
Here’s the delicious final product. It was packed with healthy ingredients and still satisfied my cheesy carb cravings!
