During college I had the absolute privilege to stay with the Lang Family in Pullman, WA for a summer at WSU. Everyday I got to hang out with their two fun girls, Maliza and Zayna. As a way of repaying them for letting me crash I tried to make dinner as often as possible.
One of our staples that summer became, what the Lang’s now call Caroline Quesadillas. As I’ve mentioned before I firmly believe that anything tastes better in a tortilla. Pair that with melted cheese and I’m a happy camper.
I love mixing small chopped veggies and sautéed meat in my quesadillas. This week it’s all about items from Trader Joe’s. Sausage is super easy to chop or slice and throw in any dish.

Smaller the better when you chop meat and veggies for quesadillas.
Once your fillings are ready it’s time to heat up the tortilla. I added a little bit of olive oil and make sure both sides of tortilla get to brown a bit before filling.
I’m a firm believer in the fold and flip style quesadilla. I’m sure people are able to successfully stack tortillas but it just works easier to fill half way and fold over. All your goodness stays in place. Remember layer of cheese, layer on toppings then layer of cheese!
Fold over the empty side with a spatula!
Now don’t touch it! Leave it alone for about 3 minutes to allow cheese to melt and crisp the tortilla. Then flip and repeat!
Take off the heat and allow to cool for a bit. If you cut too early your filling will ooze out.
Cut into wedges and serve with guacamole, salsa, sour cream, hot sauce, etc. Stuff in face!
