Whipping up a hearty breakfast for a group can be time consuming. This casserole is easy to whip up the night before and warm in the oven the next morning. Just follow the three basic steps.
Step 1: Potatoes
I start with chopped potatoes. Any kind will work- could even mix in sweet potatoes. To cut down on baking time put bowl in microwave with a bit of water to soften or cook for awhile in skillet. Add in fresh or dried herbs for flavor to taste.
Step 2: Meat and Veggies
Brown sausage (I use spicy) and add chopped veggies like peppers and onions in a skillet. Could add in bacon, tofu, or skip protein all together and just load up on veggies. Spinach would be a great addition!
Scramble up 10-12 eggs. Add eggs to other ingredients in a casserole dish that’s been coated with cooking spray.
Cook at 350 for 15 minutes and them top with shredded cheddar cheese and cook for an additional 5 minutes or until melted.
Lots of options and substitutions can be made to this dish. Use what you have on hand!
